Chocolate Mud Cake

  • 225g Butter
  • 4 Egg
  • 400g Caster Sugar
  • 30g Cocoa Powder
  • 110g Plain flour
  • 150g Self raising flour
  • 20g Honey
  • 25g Instant Coffee
  • 5g Vanilla Bean Paste
  • 60ml water
  • 190g Dark Chocolate
  • 100ml Milk

Makes
  1. 1. Preheat the oven to 160 degrees celsius. Grease and line cake tin.
  2. 2. Melt butter, dark chocolate, water, vanilla, instant coffee and honey in a heat proof bowl over a pan of simmering water. Stir gently to mix evenly with a spatula. Leave aside to cool.
  3. 3. Sift self raising flour, plain flower and cocoa powder into a separate bowl. Add caster sugar in and mix well with a wooden spoon.
  4. 4. Add eggs into milk and lightly whisk together. Pour egg mixture into the dry ingredients, and fold in immediately with a wooden spoon until completely incorporated.
  5. 5. Pour the chocolate mixture into the batter and fold in together until well combined.
  6. 6. Pour mixture into the cake tin and bake for 100 - 110 minutes or until a skewer comes out clean after being inserted into the centre of the cake. Leave the cake to cool in the tin for 30 minutes. Remove cake from the tin and leave to cool completely on wire racks.
