Around the World in 12 Cakes – Month 12 – Sweden

With only two more sleeps until Christmas, it is time to introduce to you, my 12th and final cake for the year. This month I wanted to make something Christmassy but not typically Australian.

For years, I have dreamt of celebrating a Northern hemisphere Christmas filled with snow, hot chocolate and warm woolen jumpers. So, rather than an Aussie pavlova I decided to take inspirations from my cake crush (one of many), Linda Lomelino from Call Me Cupcake and make a delicious Swedish soft gingerbread cake with cream cheese icing.

I wanted to play up the textures and mood with this cake with rustic layers and icing, a rusty tin meat safe, crinkled tablecloth back drops and wooden tabletops set off with a shiny glass cake stand and red currants.  I’m really happy with how the photos turned out, especially after dealing with the amount of shadows in Mum’s house.
