Around the World in 12 cakes - Month 5 - Mexico

This post was originally supposed to celebrate Cinco de Mayo, however, my day job, moving house and everyday life has put me a little bit behind schedule. 
Cinco de Mayo (literally 'the fifth of May') is celebrated by Mexican-American communities to commemorate the Battle of Puebla.

I have to admit, I have a bit of a crush on Mexico - the bright colours, the food, mariachi, the amazing dresses from Little Tienda - and a siesta in the middle of the day! What better way to celebrate Mexico (and to test out the oven in our new house!) than with a coconut cake filled with a margarita curd and decorated to look like a piñata (complete with papel picado bunting). 

I loved the mini-party atmosphere I got to wake up to the morning after finishing the cake - rainbow confetti, a giant pinata and cake - what more could a girl want?!
