Around the World in 12 Cakes - Vietnam

Earlier this month I said a tear-filled farewell to my big brother Lee and his wife Emma as they prepared to leave for the biggest adventure of their lives – moving to Vietnam for the foreseeable future!
As the caker in the family, I offered to make a cake for their farewell party – made with literal blood sweat and tears. I sliced my finger while rushing to trim the excess fondant (don’t worry, no blood dripped on the cake), sweated over the thought of the little figurines falling apart during the 5+ hour car trip and shed tears over the happy moments shared with two of my favourites – all the while wishing them the very best.
The cake inside was a delicious (if I do say so myself) caramel mud cake with white chocolate ganache and was decorated to look like a Vietnamese rice terrace with Lee and Emma sitting on top. Lee is going to be a motorbike tour guide so it was only fitting that a minsk-inspired bike also featured.
