After a good 6 months between drinks, birthday season kicked off with a bang last week at work. What better way to kick it off than with a delicious lemon meringue inspired cake for our Deb!
Knowing that I love a challenge, Deb asked if I could makke her cake dairy free - with Deb's brief of dairy free cake and her love of coconut and citrus flavours, I came up with this little baby. A combination of an olive oil vanilla cake, with a tangy dairy free lemon curd and a light and fluffy, marshmallow-ey meringue coat with a toasted finish.
