The Techniques of a Caker – Macarons

With Easter literally just around the corner and a blog post overdue, I thought it would be fun to take a traditional Easter treat – Hot cross buns – and turn them into a delicious macaron. With some leftover mixture I also made some super cute bunnies.

The macarons were filled with a delicious buttercream, flavoured with cinnamon, mixed spice and ground ginger with the zest of half an orange. I also made a sultana puree which was spooned into the middle before sandwiching the two macaron shells together. I finished the hot cross buns with a royal icing cross and hand painted the bunnies ears, noses and eyes.
